Culinary Green Cardamom Pods
This is a very versatile little pod as it will happily compliment both savoury and sweet food alike.
Cardamom pods come from a plant in the ginger family, native to south India. Whilst you can buy cardamom ready ground, it is best to buy the pods and grind yourself at home.
Cold Drinks – Perfect for adding a little bit of spice to your gin and tonic or for your cocktails and mocktails. Lovely as a twist to water, along with a slice of lemon or lime. Also a nice addition to a glass of chilled white wine, this I discovered by accident.
Hot Drinks – Lovely when used in chai lattes or added to warm milk with a little ginger, cinnamon and honey. In a number of Middle Eastern countries, cardamom is added to coffee to add a really rich taste. Serving a guest with coffee mixed with cardamom and cream is seen as a welcoming gesture. You can add this to both coffee and tea to really change the flavor. I’ve actually tried this, and my favorite way to do this was to grind some of the seeds in my coffee grinder along with the beans before brewing my coffee.
Savoury Foods – For many recipes where cardamom pods are used you first need to grind them using a pestle and mortar. If you are making foods such as curries, simply add to your dish while cooking. The pod will dissolve during the cooking process. Cardamom pods really lend themselves to Indian foods and all types of curries. The strong taste compliments most curry sauces, and also works well to flavor rices such as basmati rice.
Sweet Foods – If you are using these to bake with, you may want to just use the seeds and discard the pods. In Scandinavia it is very popular to use cardamom for baking. Many different sweet pastry and bread recipes include the use of this to add a strong flavor. Some sweet dish ideas on how to cook with cardamom pods could include: –
Adding to Ice-Cream, Rice Pudding with Cardamom, Fruit Salads, Breakfast Oats with Cardamom, Cardamom Apple Pie or Crumble, Pumpkin Pie with Cardamom, Muffins and Cookies, Banana Loaf. Cardamom Sugar is also a lovely way to use the spice. Split a cardamom pod and release the tiny seeds. Put the seeds in a mortar and pestle along with a teaspoon of sugar. Grind until it becomes a a fluffy powdery mix. Use cardamom sugar to flavor drinks and baked goods. Use a spoonful of cardamom sugar to add to your whipped cream. Whip as usual and use it to top everything from hot cocoa to cupcakes.
Freshen Your Breath – In Ancient Rome, cardamom was prized as a breath freshener. Romans, along with ancient Egyptians and Greeks, used cardamom as a tooth cleaner after meals. You can do the same by skipping gum and chewing on a cardamom pod instead.
